We were looking through some recipes the other day to get some inspiration for new dishes for the Stone Grill. It’s always good to shake things up a bit and try something new. We like doing it and our diners like us doing it. It’s a win win!
While planning for the spring and summer season, we came across this quick and easy roast fish dinner. It isn’t something we would necessarily cook here in the restaurant but one of the staff said it would be ideal for busy parents.
So with that thought, we are posting it here on the Stone Grill website. It’s a one pot dish that offers healthy, tasty fish with herbs and vegetables. It takes minutes to prepare, uses only a single roasting dish and is pretty cheap too. This particular recipe serves two but could easily be scaled up to serve a family.

6-8 small potatoes, quartered
1 onion, peeled and sliced
2 garlic cloves, peeled and chopped
1 tsp dried oregano
2 tbsp. olive oil
1/2 lemon, cut into wedges
2 large tomatoes, cut into wedges
2 skinless boneless cod fillets (about 200g)
1 tbsp. fresh parsley, to serve
Pre-heat your oven to 190C.
Add the potatoes, onion, dried oregano and garlic into the roasting tin or dish and cover in the olive oil. Make sure everything is covered in oil and then season with salt and pepper. Cook for 15 minutes. Remove from the oven, give the vegetables another mix around and cook for a further 15 minutes.
Remove the dish once more, add the lemon and tomatoes and give it another 10 minutes. Finally, add the fish, season to taste and roast for a final 10 minutes. Once cooked, sprinkle with chopped parsley, divide onto two plates and serve.
This is an easy roast fish dinner that is also light, relatively cheap and very simple to prepare. It is light and fresh on the palate and offers a lot of scope for experimentation. Perfect for a midweek dinner for all the family!
