Quick and healthy steak recipes for after Christmas meals

So now all the fuss is over and done with and we are in that relaxed lull between Christmas Day and New Year’s Eve, it’s the usual time to think of health, losing weight and eating better. We all do it. We eat too much over the holiday, then spend January making up for it.

With that in mind, we here at The Stone Grill have come up with some more quick and healthy recipes for post-Christmas meals. If you read our post ‘Quick steak recipes for Christmas emergencies’, you will already have a couple of ideas of what to cook. Here are a couple more.

Miso steak

This Japanese take on steak is light, low calorie, yet packs in a real flavour punch.

Ingredients

2 tbsp. brown miso paste

1 tbsp. sake (dry sherry if you can’t find sake)

1 tbsp. caster sugar

2 crushed garlic cloves

300g/11oz lean steak

Some baby spinach, sliced cucumber, celery, radish and toasted sesame seeds to accompany.

Method

Mix the miso paste, sake, sugar and garlic and coat the steaks to marinade. Massage in to the steaks and leave for as long as possible.

Heat up a griddle pan until smoking hot, wipe the marinade from the steak and cook for a couple of minutes each side until the steak is cooked to your liking. Then rest for a couple of minutes, slice and serve with the accompaniment.

Griddled steak with red chilli pesto

This griddled steak with red chilli pesto delivers restaurant-quality food that is low in calories and easy to make. Ideal for this time of year.

Ingredients

50g blanched hazelnuts

1 red chilli, deseeded and roughly sliced

85g watercress

1½ tbsp. olive oil

1 tbsp. balsamic vinegar

2 rump steaks

Method

Toast the hazelnuts until golden and the garlic until soft. Add the hazelnuts, half the watercress, the chilli and the olive oil into a food processor and blitz to make the pesto.

Get a griddle pan smoking hot and sear the steaks until they are cooked to your liking. Allow to rest for a couple of minutes and add the steak juice to the pesto. Then put the rest of the watercress into plates with some of that baked garlic, add a steak and then divide the chilli pesto between them. Add a drizzle of balsamic vinegar to finish.
