The final bank holiday of the summer is almost upon us and the Met Office says it’s going to be a good one. I thought now would be a good time for some top steak tips. Summertime is barbecue time and if this weekend is indeed going to be sunny, it may be the final time we use out trusty BBQ.
The lure of cooking outdoors is hard to resist, especially as we get so few sunny days. Some of you may be masters at barbecuing steak while others may be a little rusty. Either way, here are the Stone Grill’s top tips for barbecuing steak.
Preheat the BBQ
Just like you need to get the temperature right when cooking over a hob, you need to do the same on the barbecue. If you’re using charcoal, load the barbecue up, light the coals and leave them to heat up. It usually takes around an hour to get up to cooking temperature. Once the coals have a grey film over them, they should be ready. If you’re using gas, give it five or ten minutes, depending on the power of your barbecue.
Prepare the steak
Get the steaks out of the refrigerator at the same time as you light the charcoal, about an hour before cooking. This allows them to rest a little and come up to temperature. Season them at the last minute as required and place them on the barbecue grill.
Cooking the steak
Don’t be tempted to fiddle with the meat. Place it on the grill and leave it alone. Cook until your desired ‘doneness’ and turn with a pair of tongs. Don’t use a fork or knife and stab the meat as you will lose a lot of juice. Flip over, leave alone to finish cooking and take the steak off when it is done to your liking.
Once the steak is cooked, place onto a tray or plate and cover with foil to rest for at least five minutes. Prepare any salad, dressings or whatever while the meat rests. Rested steak is softer and more tender so patience really does pay off!
Keep it simple
If you buy good quality steak, you shouldn’t need complicated sauces or dressings to make a delicious meal. Good quality meat, cooked according to these tips, a simple salad or dressing or even a simple marinade should be enough to deliver an exceptional meal.
